Date and Walnut muffins

I bought a bag of chopped dates last month.  And I forgot about them.  My original thought was to make sticky toffee pudding with them.  Do you remember when Hagan Daas had that contest for people to help make the next flavor for their ice cream, and the winner was the sticky toffee pudding?  No?  Well, I do, and that ice cream was amazing, so I wanted to make the main portion, the sticky toffee pudding and see what it was like.  But I never had dates.  Now I did.  But...  I didn't have any of the other ingredients to make it.  So I started eating the dates out of the package.

I didn't want to eat an entire package of dates though.  Bart was sad that he got the muffins cold that I made yesterday, so I got up early and made Date Walnut muffins.  And it was good.  I forgot to take pictures though.  I have eaten them all up.  They were awesome hot, and are still good cold.  My kids have eaten them.

I now need to buy dates again to make sticky toffee pudding.  I will be taking the recipe shopping with me, that way I make sure I have all the ingredients.  My mom really wants me to make it, and she will be here in a couple of weeks.

So, I will make it.

So, found out today I may have a bile duct stone.  I'm in pain.  Yet, I am still cooking.  I refuse to let pain knock me down anymore.

  1. Have you ever seen the show "Cupcake Wars" on the Food Network? It's a pretty good show. I think you'd like it :)

  2. I don't have cable, but I have found a few episodes online. I would love to be on that show, except they want cupcakes that really really cross the bar it seems, and anything that is just good old fashioned cupcakes seem to lose. Of course, I've only seen three episodes.

  3. Yeah, it does seem like they punish contestants for making "normal" cupcakes. I'm not much of a baker but that show is mesmerizing watching them pour in fillings, piping icing, and making fondant decorations. The only downside is I always end up wanting to eat cupcakes by the time the show's over. lol

  4. I hope to be able to do cupcakes like them though one day. I am planning on doing 500 for Velvet's wedding, on the day of it, so it will be like a partial cupcake war, lol.
